Hello All,

Below is one of our favorite recipes as it is quick and healthy.

One Pan Roasted Veggie and Chicken Sausage

Prep Time: 10 minutes Cook Time: 25 minutes Servings: Yield: 4
INGREDIENTS
5 organic chicken sausage links (any flavor), chopped into bite-size chunks
2 crowns broccoli, chopped into bite-size florets
2 sweet potatoes, chopped into bite-size chunks
1 red onion, peeled and roughly chopped
3 cloves garlic, minced
1/2 teaspoon sea salt
1/2 teaspoon ground pepper
2 Tablespoons olive oil or avocado oil
sriracha, for topping (optional)
rice, quinoa or whole grain, for serving (optional)
DIRECTIONS
Preheat oven to 400°F. Chop everything and then toss your sausage, broccoli, sweet potato chunks, onion and garlic on the baking sheet.
Drizzle oil over sausage and veggie mixture, sprinkle on salt and pepper and toss to combine.
Place the baking sheet in the pre-heated oven and bake for 15 minutes. Toss the mixture using a spatula and bake for another 10-15 minutes or until sweet potatoes are fork-tender.
Season with additional salt and pepper, to taste and serve over cooked rice or quinoa with sriracha sauce, if using.

Cup cakes
1 1/2 cup sugar
4 eggs
2 1/2 cup flour
1 cup milk
3/ cup oil
2 1/4 tsp baking powder
1 tsp vanilla extract

Beat sugar and egg (about 1 min), add milk, oil, power and vanilla and beat for about one minute.

Jalapeno Corn Bread
1 TBSP vegetable oil
1 and 1/2 cups of cornmeal mix
1 cup buttermilk
3 TBSP vegetable oil
1 (8 ounce) can cream style corn
2 eggs beaten
garlic powder to taste
1/2 cup chopped green peppers
8 slices crisp cooked bacon, crumbled
1/4 to 1/2 cup canned chopped jalapeno peppers (to taste)
1 1/2 to 2 cups of shredded sharp cheddar cheese

Grease baking pan with 1 TBSP oil. Preheat the pan in a 350 degree oven for 10 min. Combine the cornmeal mix, buttermilk, 3 TBSP veg oil, corn, eggs, garlic powder, green pepper, bacon and jalapeno peppers in a bowl. Mix well. Pour half the batter into the preheated baking pan. Sprinkle with 1 cup of cheese. Top with the remaining batter. Bake at 350 degrees for 45 min. Sprinkle with the remaining 1 cup of cheese. Bake for 8 to 10 more minutes or until the cheese melts. Yield: 10 servings

Baked Ziti (makes 8 servings)

Ingredients (double for a larger group)
1 - 16 oz package of Ziti
26 oz jar of pasta sauce
15 oz ricotta cheese
8 oz. shredded mozzarella
1 egg lightly beaten
1 tbsp dried parsley (or 1/4 cup freshly chopped)
1/4 tsp black pepper
1/4 cup parmesan cheese

Cook Pasta according to directions and remove from water
Preheat oven to 350
Grease (with crisco) 2 quart casserole
In a large bowl, blend ricotta, pasta sauce, 1 cup mozzarella, egg, parsley, and pepper
Stir in cooked pasta (ziti)
Spoon mix into the casserole, sprinkle the top with the remaining mozzarella and parmesan cheese
Bake until top is golden, about 30 minutes
